  • What: The authors aimed to investigate the effect of supplemen­ tation of the carnosine synthesis precursors, 1% β-alanine and 0.5% L-histidine, which have been shown to significantly increase the carnosine content in chicken breast meat without affecting lipid oxidation, on the characteristics and micro­ structure of muscle fibers in slow-growing chickens.
