SUMMARY
During the juice processing, a large quantity of valuable bioactive compounds remains in the pomace. Raspberry pomace was found to be rich source of essential_fatty_acids, dietary fibers and antioxidants since it consists mainly of seeds (80%) and pulp. The content of macronutrients (proteins, carbohydrate, fats, dietary fibers, essential_fatty_acids-linoleic and α-linolenic) as well as antioxidant properties of cookies used in this study were previously reported by Šarić et_al.
