- what: This paper presents the results of studying the effect of modifying conditions on the properties and structure of tuna skin gelatin using green tea polyphenols. The aim of this study was to define the suitable paramters for gelatin modification by polyphenols extracted from green tea to enhance the mechanical properties of gelatin.
