SUMMARY
Casein fraction in donkey milk (5.12 mg/mL) is mainly represented by αS1-CN and β-CN and smaller amount of αS2-CN and κ-CN (Chianese et_al, 2010; Cosenza et_al, 2019; Auzino et_al, 2022). In donkey milk, the β-LG showed a mean content of 1.3 to 5.5 mg/mL, similar to the level observed in mare milk and lower than that of goat milk (Miranda et_al, 2004; Brumini et_al, 2016). This different property indicates that the ability of ruminant β-LG to bind fatty_acids is not shared by the homologous_protein in nonruminant milk . . .
