    It was indicated that during the acclimation of plants to temperature stress, a crucial process is the modulation of membrane fluidity via changes in the unsaturation of the fatty_acids in the hydrophobic part of the membrane. Model studies performed for phospholipids, a group of lipids that are present in all types of membranes, showed that those that contained oxidised fatty_acids with more polar head groups might migrate towards the water phase, which leads to an increase in the mean lipid molecular area, and a decrease in the lipid bilayer thickness.
