SUMMARY

    One portion was used to determine pH, moisture, ash, protein and lipid contents, according to the AOAC, and the remaining part was freeze-dried and analysed for the fatty_acid profile and mineral composition. A balanced intake of n-6 and n-3 fatty_acids is essential to ensure welfare and reduce the incidence of cardiovascular and other chronic diseases. Current estimates show that the ratio of n-6 to n-3 fatty_acids is approximately 10 to 20:1. The higher n-6/n-3 ratio in the muscle tissues, breast and drumstick in autochthonous populations . . .
