  • What: The aim of this study was to provide data contributing to the filling of this knowledge gap by: The heat treatment was performed with the use of "thermal cells" equipment, which was designed specifically for heat treatment of solid food matrices, similar to the approach proposed by Chung et_al . To assess the extent to which the model can be applied, a double validation was conducted.
