HIGHLIGHTS
- What: This study investigates the use of immobilized lipase for the enzymatic glycerolysis of crude squid viscera oil to produce an alternative to fish oil for omega-3 nutritional applications. This work explores the impact of key parameters influencing the reaction and optimizes these for the squid-oil acyglycerolysis process, including choice of enzyme, enzyme amount, substrate ratios, operating temperature, reaction time, mixing speed and removal of water during the reaction. This study shows that high reaction (88% retained) but decreased significantly after 24 h reaction (50%).
