Thermophiles and hyperthermophiles are unique microorganisms that not only survive but also thrive at high temperatures. L-ASNase (EC 3.5.1.1; L-asparagine amidohydrolase) catalyzes the conversion of the amino_acid L-asparagine (L-Asn) to L-aspartic acid and ammonia and is used in the pharmaceutical, biosensor and food industries. By catalyzing the hydrolysis of L-Asn, L-ASNase prevents the reaction of reducing_sugars with this amino_acid to form carcinogenic acrylamide.
