Upcycling quince peel into bioactive ingredients and fiber concentrates through multicomponent extraction processes

    According to the Food and Agriculture Organization (FAO) of the United Nations, global food production must increase to meet the demands of the growing world population. Regarding phenolic compounds, hydroxycinnamic acid derivatives (mainly, 3-caffeoylquinic and 5-caffeoylquinic acids) and polymeric procyanidins (or flavan-3-ols) have been described in whole pitted quince and its peel. Both quince pulp and peel extracts have antioxidant activity, and peel extracts can be even more effective in scavenging free_radicals and inhibiting the growth of some microorganisms than pulp extracts. The malic acid BE showed the highest levels . . .
