    Scholars have identified 29 different types of collagens with different distinct amino_acid sequences and molecular structures. Among the discovered collagens, type I collagen has a wide range of food, cosmetic, and biomedical applications due to its excellent biocompatibility, low antigenicity, and high biodegradability. Li et_al extracted collagen using two different methods to extract collagen from the skin and bones of Spanish mackerel.
